Recipe : Buttermilk Pancake

Homemade Buttermilk Pancake

Ingredients: (8-10 pcs)
- 400 ml fresh milk
- 2 tbsp lime juice (can subtitute with white vinegar / apple cider / cuka)
- 250 gr medium flour (segitiga biru)
- 1/4 tsp salt
- 2 tsp baking powder
- 3 eggs yolk
- 3 eggs white
- 1 tsp baking soda
- 30 gr sugar
- 50 gr unsalted butter (melted)

How to make:
1. Make buttermilk (mix milk and lime juice, stir it then rest it around 15 minutes)
2. Sieve the flour, salt, baking powder, then put sugar (put aside)
3. Beat the egg yolks with mixer till the color turn pale, then put the buttermilk mixture and baking soda in the egg yolk mixture. Stir it well.
4. Put the flour mixture, then stir it well till not too many lumps (put aside)
5. Beat the egg whites till soft peak, the put to the batter, mix it well.
6. Add the melted butter, stir it until mixed well. Rest the batter around 30 minutes.

7. Heat the Teflon (non-stick plan) with low heat, then pour the batter (around 1/2 - 1 scoop or laddle)
8. Wait until bubbles appear in the surface. (like the picture below)

9. Then flip it over with spatula, and cooked until the color turn brown (golden brown). Then put it in the plate.

10. You can serve it with chocolate sauce and whipped cream or just with butter and maple syrup.


This time I serve with chocolate sauce and honey vanilla whipped cream..

For Chocolate Sauce : Just boiled 250 ml whipped cream (anchor/elle vire) then pour into 100 gr dark chocolate (conveture), mix it with whisk till it blend well. Then put aside.

For the Vanilla Honey Whipped Cream : Just whisk 300 ml whipped cream until soft peak, then put 1-2 tsp vanilla essence and 5-8 tbsp honey (depend on your taste), the mixed it well.

Recipe : Home Made Uncooked Cheese Cake

Home Made Uncooked Cheese Cake

Ingredients:
Sugar Dough
  - 25 gr soft butter
  - 25 gr margarine
  - 68 gr icing sugar
  - 1 pc egg
  - 150 gr soft flour
• Genoise White
  - 3.5 pcs eggs
  - 90 gr sugar
  - 90 gr medium flour (segitiga biru)
  - 50 gr melted butter
• Cream Cheese
  - 4 pcs egg yolk
  - 150 gr icing sugar
  - 7 pcs gelatin leaf
  - 80 ml water
  - 175 gr whipped cream
  - lemon zest
  - vanilla essence

How to Make:
• Sugar Dough
  1. Sift the flour on the bowl
  2. Fold in butter (cut into dice), margarine, and icing sugar into the bowl
  3. Rub in the soft flour and all the dry ingredients using your hand until the mixture resembles coarse crumb
  4. Fold in the egg, the rub in the dough until it mixture incorporated an the dough become together
  5. Form the dough into a stainless steal bowl, wrap the bowl with plastic wrap, then rest it around 15 minutes
  6. After it rested, roll the sugar dough like the genoise white size, then print with genoise white baking pan
  7. Then put in the pan and bake in 200ºC around 10-15 minutes (before bake, prick the sugar dough first)
Genoise White
  1. Mix the eggs and sugar in the bowl, then whisk it until soft peak (ribbon like pattern)
  2. Fold in 1/3 of medium flour into the whisked eggs & sugar using a large rubber spatula, then fold the remaining flour, after that fold in the rest (don't over mix or you will deflate the butter)
  3. Fold in the melted butter into the batter, then mix it with rubber spatula
  4. Prepare the pan (give margarine and baking paper so the cake will not stick with the pan)
  5. Pour the batter into the pan, then bake in 180ºC, 30 minutes
• Cream Cheese
  1. Bain-marie egg yolk and icing sugar until the volume increase and the sugar mix well
  2. Fold in the cream cheese into bain-marie mixture, then mix it
  3. Then put the gelatin leaf that already soaked with cold water, then mix it well
  4. Fold in whipped cream, lemon zest, and vanilla essence onto the mixture, mix it again

-> Put the sugar dough in the bottom of genoise white ring pan, then give the strawberry jam on it to make the sugar dough stick together with the genoise white. After that fold in the cream cheese, then put in the frozen till become hard. After it become hard, remove from the frozen and the ring, then garnish it with strawberry or blueberry or any kinds of fruits..

This is the cake still frozen in the ring


You see in the bottom one is sugar dough, look like black color is blueberry jam, above the blueberry jam is uncooked cheese, then top is strawberry.. hehe..
